Every curry is prepared Durban-style — the masala is roasted, the meat goes in raw, and it cooks down slow until the gravy is thick enough to hold a roti.

4 Chilli started with a simple frustration: you could not get a proper Durban curry in the east of Pretoria. Not the thin, sweet stuff — the real thing. Masala roasted until the kitchen smells like a spice market. Mutton on the bone, cooked low until the marrow gives up.

So in 2011 we built it ourselves on Jacqueline Drive. Everything is cooked to order, which means you wait a few minutes longer and you taste the difference. Nothing sits under a lamp.
